Lamb Kebabs

Lamb Kebabs (Souvlakia in Greek) are a delicious and healthy Mediterranean dish.

Ingredients

  • 1 cup olive oil, plus more for grilling
  • 2 tablespoons dried oregano
  • 1/4 cup fresh lemon juice, plus 1 grated lemon peel
  • 1 1/2 teaspoons salt
  • 1 tablespoon ground black pepper
  • 1 boneless leg of lamb, cut into 1 1/2 inch cubes
  • 10 large wooden skewers, soaked in water for 1 hour
  • 2 onions, cut into 1-inch squares
  • 2 green bell peppers, cut into 1-inch squares
  • 2 firm tomatoes, cut into 1-inch squares, or cherry tomatoes
  • Pita bread, for serving
  • Tzatziki sauce, for serving

Instructions

  1. In a mixing bow, combine olive oil, oregano, lemon juice, and grated lemon peel, salt and pepper. Add lamb cubes and toss to coat.
  2. Cover and marinate in the refrigerator for 1 to 8 hours. Turn cubes occasionally.
  3. Thread the skewers, begin with a lamb cube and alternate with vegetables. End with a lamb cube.
  4. Brush the skewers with olive oil and lightly season with more oregano, salt and pepper.
  5. Grill for 8-10 minutes, or until the meat is done to your taste. Turn every 2 minutes to cook evenly.
  6. Serve with warm pita bread and Tzatziki sauce.
