Honey Barbecued Chicken Recipe

Honey Barbecued Chicken
This recipe calls for an entire chicken, quartered into four separate pieces, consisting of two legs (thigh and drumstick together) and two breast halves. The recipe also works on the individual parts, if a whole chicken is not desired.
The chicken can be cooked in the oven or barbecued over charcoal.
Ingredients
- 2-3 pounds Chicken, quartered
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons soy sauce
- 3 tablespoons brown sugar, packed
- 1.5 (1-1/2) teaspoons salt
- 1 teaspoon Tabasco sauce
- Basting Sauce:
- 1/4 cup honey
- 1 tablespoon soy sauce
- 3 tablespoons water
Instructions
- Wash and dry the chicken quarters thoroughly and sprinkle them with salt. Place them in a dish and set aside.
- Combine the lemon juice, soy sauce, sugar, salt and Tabasco sauce and pour it over the chicken. Refrigerate, covered for 4 hours or overnight.
- When ready to cook, mix the basting sauce ingredients in a bowl.
- OVEN: Preheat to 350° F. Remove chicken from the marinade and put it on a rack in a roasting pan. Pour 1 cup of water in the bottom of the pan. Cover chicken loosely with aluminum foil and bake for 30 minutes. Remove foil and bake for 10 minutes more, basting with the sauce every 5 minutes until brown on one side. Turn the chicken over and bake another 10 minutes, basting that side.
- CHARCOAL: Cook 6 inches above hot coals for 25-30 minutes, turning frequently and basting every 5 minutes.
