Lamb Kebabs

Lamb Kebabs (Souvlakia in Greek) are a delicious and healthy Mediterranean dish. These flavorful grilled skewers are perfect for summer gatherings and weeknight dinners alike.

Ingredients
- 1 cup olive oil, plus more for grilling
- 2 tablespoons dried oregano
- 1/4 cup fresh lemon juice, plus 1 grated lemon peel
- 1 1/2 teaspoons salt
- 1 tablespoon ground black pepper
- 1 boneless leg of lamb, cut into 1 1/2 inch cubes
- 10 large wooden skewers, soaked in water for 1 hour
- 2 onions, cut into 1-inch squares
- 2 green bell peppers, cut into 1-inch squares
- 2 firm tomatoes, cut into 1-inch squares, or cherry tomatoes
- Pita bread, for serving
- Tzatziki sauce, for serving
Instructions
- In a mixing bow, combine olive oil, oregano, lemon juice, and grated lemon peel, salt and pepper. Add lamb cubes and toss to coat.
- Cover and marinate in the refrigerator for 1 to 8 hours. Turn cubes occasionally.
- Thread the skewers, begin with a lamb cube and alternate with vegetables. End with a lamb cube.
- Brush the skewers with olive oil and lightly season with more oregano, salt and pepper.
- Grill for 8-10 minutes, or until the meat is done to your taste. Turn every 2 minutes to cook evenly.
- Serve with warm pita bread and Tzatziki sauce. If you’re looking for more ways to enjoy lamb on the grill, try grilled leg steaks with mint pesto or lamb chops with chimichurri.
